f Du sanctuaire au macellum : sacrifices, commerce et consommation de la viande à Pompéi

Here and there we find passages in the Christian authors, which on the one hand throw light on the connections between animal sacrifice and meat consumption in Antiquity and, on the other, on the important function of the macellum in Roman towns. It was there, in the city’s public markets, where sacrificed meat was primarily distributed. It remains to define how the commerce of meat was organised, from the sacrifice of the animal to the final disposal of the meat. At Pompeii, the rich documentation and the excellent state of archaeological remains allow us to describe the entire chain of events of sacrificial practice and meat selling in detail. The aim of the present paper is, then, to follow the food chain in its urban context at Pompeii. We begin with the procession and the sacrifice of the animals in the sanctuary, pass on to the marketing of the meat in the macellum and end with the problem of final consumption: the serving of the carnes in the house triclinia.

Quelques auteurs chrétiens nous renseignent sur le lien essentiel qui existait entre le sacrifice et la consommation de la viande ainsi que sur la fonction essentielle du macellum dans les villes romaines : c’est en effet dans le marché public de la cité que l’on distribuait et que l’on achetait en priorité la viande des animaux sacrifiés. Fort de ce constat, il reste à préciser comment s’organisait le commerce de la viande dans les cités de l’époque romaine, de l’organisation des sacrifices aux opérations de boucherie et à la vente des chairs des victimes. À Pompéi, la bonne conservation des vestiges et l’abondance de la documentation permettent de mettre en évidence la chaîne alimentaire de la viande en contexte urbain. L’étude retrace ainsi les différentes phases de la pratique sacrificielle, de la procession à l’abattage de l’animal jusqu’à la vente des chairs dans le macellum avant d’envisager le problème de la consommation de la viande dans la cité.
