La documentation textuelle de l’Islam médiéval recueille un ensemble d’injonctions, prescriptions et conseils en matière d’alimentation. Liées à des raisons religieuses, sanitaires ou culinaires, ces recommandations dépassent nettement la simple dichotomie entre l’aliment sain/nocif (/) et licite/illicite (/). Parmi les aliments documentés, le poisson (, ) constitue un objet complexe à étudier en raison de la grande diversité des espèces et des préparations (frais, salé, grillé, bouilli, frit, séché, mariné, …). Notre contribution mobilise principalement les traités médicaux et culinaires de l’Occident islamique (Maghreb et al‑Andalus), datés entre le IXe et le XIVe siècle, pour interroger les normes et les pratiques ayant trait à la consommation de poissons.

Abstract

The textual documentation of medieval Islam collects a set of injunctions, prescriptions and advice regarding food. Related to religious, health or culinary reasons, these recommendations clearly go beyond the simple dichotomy between wholesome/noxious (/) and licit/illicit (/) food. Among the documented foods, fish (, ) is a complex object to study because of the great diversity of species and preparations (fresh, salted, roasted, poached, dried, fried, smoked, soused, …). This contribution mainly draws on medical and culinary treatises from the Islamic West (Maghreb and al-Andalus), dated between the ninth and fourteenth centuries, to interrogate norms and practices concerning fish consumption.
